He sampled Chamlija’s Papaskarası in the bucolic, outdoor Çamlık Lokantası in Büyükkarıştıran in the heart of Thrace’s southern flatlands: ‘It’s alive! And tremendously mouthwatering! We drink it with (very large quantities of) fatty, juicy, savoury lamb and beef Trakya köfte, the wine encouraging more meat, the meat encouraging more wine. Note “drink”. Any pretence at “tasting” this wine has long since been discarded.’
